As for the emotion attached to a memory — if they don't remember it, they won't remember the emotions that come attached. This is not to say that they won't feel a twinge if something hits a ping or a trigger, but for the most part they won't remember how angry or guilty or full of rage a certain memory could make them unless they are naturally like that before the memory happens.
Physical skills are lost along with magical skills. There are even skills that have been played with in game that involve aging up, paralysis, or even death (to turn into a vampire or a ghost). Skills are fairly flexible!
The pace of the game is about medium right now, though it does have fast moments.
And yes! Characters - no matter who they are - will lose all of their memories upon arrival in Kyriakos. There is no choice about it unless they start with a single memory instead of a single skill. In that case, they could have the chance to remember their name if you want your character to know their name immediately! Some teams have cute themes (Barghest uses stars, Dawon uses flowers, Takshaka uses Color Bird style names, Gulgallana uses transition sounds, etc.) that they will help their new members with once they wake up ICly, and some teams just come up with whatever sounds cool at the time. This is optional if you choose to give them back a name with their first and only memory, but it's a possibility!

- Would "combat skills" have to be broken down into say hand-to-hand combat, or armed combat?

That is also up to you — if you want to have one skill that encompasses everything to do with combat, that's fine! However, it's also fine to break it up into different kinds of combat.
